Meet our Vegan Sushi Chefs:
How he became a Chef: Chef Ken`s career in Vegan sushi all started when he learned the secret of Japanese cuisine from a Sushi Chef when he was 18. He continues to be creative and explores food from different aspects. He is what you`d call, a performing Chef who turns his kitchen into his very own live stage. In 2018, he starts a partnership with Chef Sachi and establishes GREEN MONDAY, focusing on vegan.
How she became a Chef: Chef Sachi becomes a chef after becoming a vegetarian to overcome her allergies and having difficult health conditions. She has been eating raw food for over 10 years. To enhance her experiences, she starts a partnership with Chef Ken and establishes GREEN MONDAY in 2018.
Chef Sachi`s achievements in Japan: A Café staff and making meals at a food truck, selling at an online bakery shop and becoming a Cooking Instructor.
Chef Sachi`s Other Certifications: An Aroma Therapist, Instructor to Chinese geomancy or Feng Shui through flowers.
Their past accomplishments in Japan: Their collaboration of the full course vegan sushi with Japanese rice wine or Sake becomes a hit among many people when serving at Mitoyotsuru – a sake brewery founded in Mitoyo, Kagawa Prefecture during the Setouchi Arts Festival.
What you will learn from Ken & Sachi: At Home Sweet Cooking, we have created healthy recipes for those who have a need in substituting certain products in their diets.
